Here are some recipes I onlu usually make in the autumn to use up a glut of courgettes! They are all tasty and the cakes are an especially good way to get the kids to eat more veg!

EASY TOMATO SOUP

This is a recipe I have come up with combining a few recipes and cutting out (what I consider) unnecessary steps. It's delicious and filling due to the pasta shapes in it. I never weigh and measure ingredients for this soup, but I have tried my best to give a rough guide as to the quantities I use. The quantities I give are enough to feed 4.

QUICK VEGETARIAN LASAGNE

This is a delicious alternative to a meat lasagne - and even my meat-loving husband enjoys this. It's so easy to prepare, as you use tins of ratatouille (find them in the tinned vegetable aisle of most big supermarkets) and only half an hour or so to cook. This recipe serves 3 - 4.


MEXICAN WEDDING CAKES
I made these for the first time the other day and they are simply delicious. I did not make them for a wedding, just for a tea party and they look great stacked on the cake stand. I got the recipe from a website called joyofbaking.com.
